Couscous is very easy to prepare and it combines well with lightly cooked, grated vegetables for quick toddler meals that adults enjoy too.
CARROT COUSCOUS
Suitable from 8 months
Serves 1 to 2
1 cup water
½ teaspoon instant chicken stock powder (optional)
1 medium-sized carrot, grated
1 teaspoon olive or canola oil
Put water, stock powder (optional) and grated carrot into a small sauce and bring to the boil. Cover, reduce heat and boil gently for about 10 minutes until carrot is tender.
Stir in couscous and oil, remove from heat, cover again and let stand for 10 minutes. Stir with a fork to fluff up couscous.
Serve warm or cold.
COURGETTE COUSCOUS
Suitable from 8 months
Serves 1 to 2
½ cup water
½ teaspoon instant chicken stock powder (optional)
1 cup coarsely grated courgette
1 teaspoon canola or grapeseed oil
¼ cup couscous
Put water, stock powder and grated courgette into a small saucepan, cover and bring to the boil. Stir in oil and couscous and bring back to the boil. Immediately remove from heat, cover and let stand for about 10 minutes. Stir again and serve.
