Cheesy Vegetable Pie

This is a yummy pie that the whole family can enjoy. Adding extra vegetables to the pie is a sneaky way of getting the kids to eat them.

1 ½ cups grated cheese
125g ricotta cheese
1 zucchini, grated*
1 tablespoon chopped fresh parsley
3 eggs
1 ½ cups Karicare Toddler or Karicare Toddler Gold Milk

  • Preheat the oven to 180°C. Mix together the cheeses, zucchini and parsley. Place in a greased 23cm dish.
  • Whisk together eggs and milk and pour over the cheese and zucchini mix.
  • Bake at 180°C for 40-45 minutes, or until set and golden brown.

* Other vegetables may be used, e.g. frozen peas or mixed vegetables. Chopped, cooked bacon can also be added.
