Chicken Liver Pâté for baby or toddler

Use the freshest chicken livers and cook them on day of purchase. This is an excellent source of iron for your baby or toddler.
350 g fresh chicken livers
2 tablespoons butter or oil
10 cm piece of celery (pale, inner stalk)
1 tablespoon chopped parsley
Optional: leaves from 2 sprigs fresh thyme
¼ cup water
- Trim fat or white sinew from chicken livers,
- Gently heat butter or oil in a frying pan. Add finely chopped celery, parsley and (optional) thyme.
- Cook, stirring, on moderate heat for a few minutes. Add chicken livers. Cook, stirring often, for about 8 minutes. Add water. Cook for 2-3 more minutes.
- For the smoothest texture put cooked livers through a mouli (food mill), or rub through a sieve, or blend in a food processor. Mix to a soft paste with a little boiled water to give a moist, spreading consistency.
