This has a mild, slightly sweet flavour.

1 tablespoon oil
½, a small (pickling) onion, finely chopped
1 small carrot, grated
2 skinned, boned chicken thighs
A little flour
1 apple, peeled, cored, sliced
1 cup water
A sprinkle of salt
1 bay leaf (optional)
In a saucepan, gently cook chopped onion and grated carrot in the oil for a few minutes.
Dust the chicken with flour and add to the saucepan with sliced apple, the water, salt and (optional) bay leaf.
Bring to simmering. Turn chicken pieces over, cover the pan and simmer on low heat for 30 minutes or until chicken is tender.
Drain off some of the liquid and reserve. Discard bay leaf.
Puree the chicken mixture in a food processor, adding some reserved liquid if needed.
For a baby who has progressed to lumpier foods or finger foods, just mash the apple/vegetable mixture to serve with a spoon, and cut chicken into little slices.
